Whether you’re planning a picnic or simply want to spend your lunch break outside, a well thought-out meal can provide the nutrition you need to maintain a healthy lifestyle. Here are a couple recipe ideas for lunches you can enjoy in the warm outdoors.

Edamame Guacamole with Pita Chips

For the guacamole, you’ll need:

  • 4 cups shelled edamame
  • 1/3 cup olive oil
  • 1/4 cup warm water
  • 1 small red onion, diced
  • 1 cup bottled diced roasted red bell peppers
  • 1 cup yellow bell pepper, diced
  • 2 tbsp. lime juice
  • 1 jalapeño, minced
  • 1 tsp. olive oil
  • 2 tbsp. cilantro, chopped
  • 2 tbsp. parsley, chopped
  • 1 tsp. salt
  • 1/2 tsp. pepper

And for the pita chips:

  • 3 pitas
  • 1/4 tsp. salt
  • A pinch of black pepper
  • 1/4 tsp. chili powder

Start by preheating the oven to 400°. Purée 3 cups of edamame with the 1/3 cup olive oil and warm water. Chop the remaining edamame and mix with red onion, bell peppers, lime juice, jalapeño, cilantro, parsley, salt, pepper, and the teaspoon of olive oil. Mix this into the purée.

Cut each pita into eight pieces, then brush with oil. Sprinkle with salt, pepper, and chili powder and bake for 10 minutes.

This recipe skips on the mayo and adds other veggies for an extra healthy lunch. It comes in two parts—the dressing, which includes:

  • 1/4 cup seasoned rice vinegar
  • 2 tbsp. canola oil
  • 1/4 tsp. salt
  • A pinch of black pepper

And the salad, which needs:

  • 5 cups red potato, cubed
  • 1/2 tsp. salt
  • 1 cup cucumber, peeled and chopped
  • 3/4 cup cherry tomatoes, sliced
  • 3/4 cup green bell pepper, chopped
  • 1/2 cup orange bell pepper, chopped
  • 1/4 cup green onion, chopped
  • 1 can sliced ripe olives, drained

To prepare, simply mix the dressing ingredients together with a whisk. Cook the potatoes in boiling water for about 8 minutes. Drain and add to dressing, tossing it to coat. Add remaining ingredients and toss well.
